BEFORE & AFTER: GRID IRON GRUB PRESENTS NEW ENGLAND CLAM CHOWDER

IMG_9426

NEW ENGLAND CLAIM CHOWER
AS ORIGINAL AS FOOT BALL & FEDERALIST

It was the last time New England and Sunday Football will be paired this season and the first time this year I decided on making this hearty soup.  Yes, the Patriots lost the battle on the gridiron but never was their a more fitting food. Joseph C Lincoln, the American author and poet, said this of chowder:

“A New England clam chowder, made as it should be, is a dish to preach about, to chant praises and sing hymns and burn incense before. To fight for. The Battle of Bunker Hill was fought for–or on–clam chowder; part of it at least, I am sure it was. It is as American as the Stars and Stripes, as patriotic as the national Anthem. It is ‘Yankee Doodle in a kettle.”  – Joseph C. Lincoln (1870-1944)

VEGGIES OF THE EARTH
EAT CLEAN

So let’s begin to create history with the battle field in your kitchen.  Here’s what you will need:

BEFORE CLAM CHOWDER

1. Clams 2. Clam Broth 3. Organic Milk 4. Canned Clams (2) 5. 2lbs Little Neck Clams Shelled 6. Potatoes 7. Celery 8. Onions 9. Sherry 10. Bacon 11. Misc. Spices

IMG_9428

BEFORE: CLAM CHOWDER
LAYER FLAVORS IN A POT & COOK

Start with a base flavor profile. In a deep pot I chopped and added onions, celery and bacon with a little bit of olive oil. The bacon arguably has its own fat, but in cooking in a pot rather than a saute pan, it is essential that nothing burns or sticks. This is the base for soup and any char that develops will stick to the bottom of the pot and surface to the top of your palette.

IMG_9434

WASH OFF STARCH
STARCH IS A THICKENING AGENT
IT BINDS

Wash your potatoes.  It does two things. It reduces the starch and frankly the organisms still potentially living on the skin. Potatoes even bought at Whole Foods are rooted in soil. They are dug up from the earth. Mind you, I like a little grit, but that’s only on the foot ball field.

50-YARD LINE:

“This is one of the best individual rivalries in the history of American sports, even if the two guys aren’t banging away at each other in the low blocks the way Bill Russell and Wilt Chamberlain did; even without the historical significance and glitz of Magic vs. Bird; or the personal histility that Muhammad Ali and Joe Frazier brought to their three prizefights.”–New York Daily News, Sunday Jan. 19, 2014

BEFORE CROUTONS

1. Extra Virgin Olive Oil 2. Old Bread 3. Pepper 4. Salt 5. Italian Spices 6. Fontina Cheese

IMG_9441

New England Patriots and the Denver Brancos meet at the center yard line. That’s even playing field. Peyton Manning & Tom Brady were there 14 times before the AFC Championship match-up. It started the last day of September 2001. Tom Brady won the first time. Peyton Manning, the last time. Funny the way it is.

Croutons are a story of old and new. I always use up bread. The same philosophy of reusing, revitalizing and refreshing old furniture in my design life at http://www.tigerlilysgreenwich.com applies to food. I don’t throw food away unless it is rotton.  Eat your leftovers or repurpose them. There are starving people in America who lack access to food.

According to feedarmerica.org, “In 2012, 49.0 million Americans lived in food insecure households, 33.1 million adults and 15.9 million children.”

IMG_9444
CUBE BREAD
MIX OIL, CHEESE, SPICES
COOK @ 350 DEGREES 18-MINUTES

In layman’s terms, that means two-years ago, 49-million American’s didn’t know where their next meal was coming from, the day before. When you are lucky enough to buy food to feed yourself, use it.bOtherwise it is a waste.

Use old bread for croutons cut into chunks. Mix-in olive oil, shredded cheese and spices until moist. Spread on cookie sheet and bake 350 degrees.

AFTER:
CLASSIC CROUTONS
REUSEABLE TEXTURE

The croutons should crumble and break into different size pieces as you touch. They can last for up to three-weeks in an air-tight seal and perfect added texture to salads. I used it here, unexpectedly, in place of traditional oyster crackers. I stronly believe in presentation and completing a thought in any field. Similiar to design, the thought process in food has no exceptions in balance, texture, color and presentation.

“Think in layers and always ask, what elements do I need to make the circle come full round?”—Samantha Knapp

IMG_9445
LAYER STOCK
FINISH WITH MILK & SHERRY
COOK COMPLETE

On the subject of full circle comes the completion of the soup. From the initial base, I layered in bay leaves, the potatoes, salt, pepper, the canned little neck clams while slowly adding the liquid components, clam juice, milk and sherry. Let that all cook for at least ten minutes at a boil, then simmer for twenty more.

CLAM CHOWDER & CROUTONS
WINNING COMBINATION

AFTER: CLAM CHOWDER

Serve in a deep bowl with a soup spoon. Garnish with bacon bits and the croutons.

Tom Brady  at 36-years-old  won 10 of 14 games before this Sunday. With the Super Bowl on the line in a returning match-ups, each team has come out with a win. Peyton Manning 37-years-old  now tipping that scale. On route to his third Super Bowl, a feet seen only by his rival Tom Brady, Troy Aikmen, Terry Bradshaw and Joe Montana, Manning had this to say:

“You certainly want to win one more”–Peyton Manning

I say try the soup.

What makes a good pair, a good couple?  Emily Bronte in Wuthering Heights says, “He’s more myself than I am. Whatever our souls are made of, his and mine are the same.”  It is likeness and difference at the same time that completes the circle and secures the bond.

BEFORE:

I found this pair the last day of Spring Brimfield. There are pluses and minuses to shopping the last day.  Arguably the whole place has been picked over. The first day is like when the Thanksgiving Turkey comes out of the oven. It is plump, fresh, delicatiable, everyone wants a piece. The last day is the pickings. The bird is down to the bone and well it takes an expert to find any white meat. Bawk Bawk!

LAST DAY: ASK FOR A BARGAIN

If you have a van and arm strength that can schelp a piece of furniture back to your vechicle you are in the cat bird’s seat. No longer are you the turkey but the cat that hunts it.  You can offer a deal to a vendor that bases on carting the furniture home ALONE they can’t refuse.

That is how I came to purchase, own and tweak the tables I found at Brimfield. I put out an offer the dealer couldn’t refuse. The two tables which are awesome in size, shape, color and function came home with me. A new journey and new beginning made me think that I wanted them to look a little bit different.

LAYERS STRIPED
REVEALS HISTORY

I started the stripping with one. I loved the original color but also love what lays beneath. Sometimes it is nice to see layers. I think it adds to the story. Other times the story is so old, you just straight lacquer paint.

PAIRS THAT CHANGE TOGETHER

When of a pair, changes and new layers are revealed, you can only hope that the partner changes too. You want things that belong together to evolve and change together. If they have been together long enough, weathered the same storms and came out into the smooth sunset together, there is an excellent chance that they will morph and when they change, they will change together and still appear as a pair. That happened

When you are you are a good pair, you are a like and different.  A good pair is priceless.   Like Bonnie & Clyde and if they are really perfect together.  They can make you money and they can make you smile.

The perfect pair goes into the before together and comes out stronger together in the after. It is layers deep. . I like how completely together these two end tables are and yet how different they are. Mounted to the wall on either side of the bed is how I see this pair. I see a loving couple sharing that experience. They are both the same and different.

JERRY MCGUIRE MANIFESTO: #13 A TIME OF RENEWAL

JERRY MCGUIRE MANIFESTO: #13 A TIME OF RENEWAL

Welcome back the Jerry McGuire Manifesto. It has been four months.  It comes out when there is something important say. For starters,  it is fall. I can confidently start there. That is important to say.  The weather is awesome, highs in the 70s, the universe is changing. It is historically harvest time. It is currently harvest time.  I have proof of that.

That’s right outside my front door. I am author yes, but don’t forget a decorator first and foremost. Anything and everything can be decorated. That’s the beauty of life. From the accessories you wear on your ears or around your neck, to the icing on a cake, to harvesting mother nature’s best and putting it outside your front door.

Forgiveness is the message of this Jerry McGuire, it opens your mind and opens doors. I forgave my dad the day he did it. I forgave myself for giving up my news career.  I forgave myself when I passed up that pitchfork at Brimfield. I could have decoratored my harvest porch with that or sold it on-line.

IMG_0009

BRIMFIELD
Why didn’t I buy that?

That was the preview to summer, May 2013. I was hardly thinking about the fall. That was the season we shot “I Brake For Yard Sales.”I was thinking about the immediate needs only of 8-famioly reveals.  The opportunity to work on designer before & after and change the way people live in their homes, that was truely an enlightening moment. It is one I have graditude for and a moment that may not have came had I not forgiven myself.

SAM ON THE SCENE
On Camera Reporting

I always thought I would be a news reporter and take after Katie Couric. Mix a little fluff and a hard news story and there I would be at the top of my game by my late twenties. I made it to the network in 2009. New York met with a recession and before long the big dream I had to for my career,  that also for the record ended with husband, big house and kids dissolved into thin air.

For all long time after that. I was depressed.

CATCHING LEAVES FALL
Fall Renewal

Fall is all renewal. You might say everything is dying, I say like a snake everything is shedding its worn skin.  Rebirth. Here’s what Truman Copote has Holly Golightly say  “Aprils have never meant much to me, autumns seem that season of beginning, spring.”

Point made, the season of harvest and bounty is also the season of forgiveness. Not to get overly religious here, but Jews celebrate Yom Kippur in September.   It is also known as The Day of Antonement, the holiest day of the year. One atones for their sins and in return we offered new prespective on life.

DSC_1979

I am glad I forgave. I forgave myself first. I forgave myself for time lost in devotion to a job that I didn’t see through. If I hadn’t, I wouldn’t have succeed in design. It opened my mind to something more. The key to forgiveness is to dervive a positive part of the equation. It is a fundamental law. A negative minus negative is a positive. See the situation for the good it withholds.

I Brake for Yard Sales Upholstered Stools

We also found these stools at Brimfield. Lara Spencer and I shopped Brimfield together. We are very close souls. We used the ottomans in a Riverside family home on a episode of “I Brake For Yard Sales.” The upholstery is shot, but the size and the shape have definite potential and character.

May 2013

Television news gave me a lot. That is my forgiveness. Rather then regret time lost, I saw the whole experience as time gained. In forgiving, I saw the benefit of having the experience. I  believe no moment or time spent is in vain.  That forgiveness, gave me my career at Tiger Lily’s. I started just answering the phone for my parents because I needed to get out of the house.

Four years later I have found my stride at Tiger Lily’s.  It took less time to upholster the ottomans.  I happy every moment and thank ful for my wonderful work. Graditude and forgiveness are one in the same.   At Tiger Lily’s, I preach seeing potential in old furniture and frames. Tiger Lily’s our store in Greenwich (www.tigerlilysgreenwich.com) is truly a magical place. Inside our Greenwich workroom, we still hand create. I am preserving that legacy.

UPHOLSTERED IN B&F BAMBOO TRELLIS
As seen on: “I Brake For Yard Sales”

the events and the steps that brought me to Tiger Lily’s are meaningful and necessary.  It takes a lot of hard work to keep a family business running. It is exclusively for the strong :). Strength is another realtive of forgiveness, students of McGuire. Not as prophetic, I will  quote  Ghandi here,  “The weak can never forgive. Forgiveness is the attribute of the strong.”

DEBUT DESIGN SHOW
Westport Arts Center

That  picture of me was taken at my first event for Tiger Lily’s. It was my design debut at the Westport Arts Center. It is now a few pages back in the books and soon to be chapters as life goes on. Forgiveness has unlocked doors and set marvelous opportunities in motion for me,  from the internet, magazines, products to television.

The ottomans were upholstered in Bruinswig & Fils, Bamboo Trellis.  We used a few cut pieces to complete them for HGTVs “I Break For Yard Sales.”  Even with out a match they crisp, bold and refreshed. For girl who thought her  life was over when my news career ended, it is serendipitous to return to TV. It is thrilling to have it happen in fall of 2013. I feel renewed,  myself when I look around and count the blessing I have.

BEFORE & AFTER: WHEN SEATING IS ON THE MENU

9NHNe20GgI4UK1FvhygZabppU0UAPZrEc4eCIw9ofBMBEFORE & AFTER: BANQUET

Tiger Lily’s is custom. That is our identity. We build ground up, all wood. There are short cuts to getting what you want in life and they start with big box retailers. Big Box we are not. Big Box uses pressed cardboard, filament. Tiger Lily’s uses wood. I know I know, it sounds repetitive but it goes back to what we believe in and what we stand for.

ua_NVpxCAZNX42VKwDisY28u1kVEMz2J1O4xFfbtjPs

Tiger Lily’s is quality. We know the name of everyone who works in our workroom, http://www.tigerlilysgreenwich.com. We know their family. We know their life story, where they came from and what they dream for their children. That is a wonderful thing.

The frame of this settee was built for a friend of mine. Lindsey Boyd Weiber of the Laundress. http://www.thelaundress.com. Lindsey is incredible talented and creative person. She is the mother of one and soon to be two. This banquet is for her dining table.

kaY0uZV-ds-KSn5M-QzSe4xvwRBWmB8D_cq-hVoJTSg

The banquet is going to accompany a Saarinen dining table.  Which has the same round edges.  The banquet seat follows the lines and contour of the oval table.Unknown-1

The first step in taking frame to finish is adding platforms and webbing. The frame is secured with alternate webbing then covered in medium foam.
IMG_6374 copy
We exaggerated the  back height of the frame to give it weight against the table. It has a tight seat and tight back.

jpi5j26b_1gYEAE6XxlUOMEy3Y7f4trRw8UZybSpPX8

To get a tight clean finish, the seat is upholstered first in muslin and pulled and tightened through the frame.

_wY-JnT1xUP3r8D-BgN2CScdJ8ubU9vABanBmbz2d8w To achieve a square stitch effect on the seat, we have to first sketch out the pattern on the foam. Each square has been perfectly measured to be consistent across the span on the back.
x6hvX-l7saCwZhvZl5rgm_RgDRIigF13_b4Ef9MRe1k

The vinyl is stitched to create a square shape, before it is upholstered. When it is done right the lines should exactly match what we sketched on the platform.

BEFORE & AFTER: DON’T FRET, OLD STOOLS CAN LOOK NEW

BEFORE:

In the 1950s, Cosco Metal Furniture,  in Columbus, Indiana lead the industry in manufacturing sensible functional furniture for the home and office. Made in the USA and made well, the furniture turns up in vintage sales and antique stores in almost perfect condition. I found these four bar stools with original COSCO branding and brought them back to our custom workroom, http://www.tigerlilysgreenwich.com.

BEFORE:
COSCO BAR STOOLS
SET OF FOUR

What I like about the stools is the simple lines, mix metals, functional swivel and the scale. The more the merrier when it comes to areas where people congregate.  At a bar or kitchen counter, I prefer four small seats then three over-sized stools. Image

Tiger Lilys Tip #1: When we recreate vintage pieces we always take them down to the bone. In some cases, we can salvage some of the inside materials if it makes sense for the piece. In this case we went with new foam for the back and the seat.

Image

TIGER LILY’S REUPHOLSTERY TIP
BRING PIECE DOWN TO ITS BONES

To transform these stools, I wanted to balance the vintage by introducing an element that was entirely new.  I selected a new 5″ tape by Samuel & Sons. It is from a 2013 collection, called Greek Fret Embroidered Border. I used the camel tone. For this project, I wanted to use the tape in an unconventional way. It is applied as an appliqué.

THE JERRY MCGUIRE MANIFESTO #13: A LITTLE HELP FROM A FRIEND

BEFORE & AFTER: THE RIGHT “KIDD” FOR THE JOB

These are the wonder years at Tiger Lily’s and we get by with a little help from our friends. I love colloborations and believe in the idea that by giving you receive, by sharing you get more.

Truth be told, the idea of giving to get more was not a gut instint for me. At times in my life, I admit that I operated from the perspective to keep what I earned, found or discovered to myself  exlcusively. Hello! My name is Samantha Knapp and I am recovering non-sharer 🙂

I have come full circle from that perspective and it is why I am now so passionate about sharing what I know and who I know as I plot my future path and campaign on Rockethub to write a book.

THE SHARE:

Mitch Kidd from Wellbuilt Co. Here’s his website ( http://www.wellbuiltco.com). Here’s his work below. The pictures tell an amazing BEFORE & AFTER transformation of a guest rooms statement wall in a New York City apartment. Kidd’s team did a brilliant job, creating a rustic space in an urban enviornment.

Image

AFTER:

I am thrilled to share the transformation of this space complete with the built in light fixtures in chrome. Together we styled the room, launching from the vibe the rustic wall created in the space.  Wellbuilt Co is growing into the Greenwich, CT market and I look forward to more opportunities to work together.

It true what they say about colloborations. They truly set the right energy in motion.

When it comes to working with others I have learned many things, in part to Goldman Sachs 10,000 Small Businesses where incidentially I met Kidd of Wellbuilt and had the opportunity to learn from Mori Taheripour faculty at the Wharton School of the University Of Pennsylvania.

Taheripour excels at understanding bargaining and leverage. Those who bargain the best come to the table with Goals, Targets and a Bottom Line. The exercise in the Positive Bargaining Zone and  Shared Interests in partnerships.

So I leave you with this quote:

BC Forbes said this: “The bargain that yields mutual satisfaction is the only one that is apt to be repeated

Do it right folks, seek out friends, network and understand that by coming together for common interests and sharing in that place you can indeed come out with more. Respect balance and it will continue to introduce to new areas of level playing fields.

Laura at Tiger Lily’s (www.tigerlilysgreenwich.com) uses “Boo” to describe her “Boo.” Boo is the nickname for her boyfriend Brandon Deaderick. They are adorable together. He’s playing ball for the Jacksonville Jags down South and she’s up here in Greenwich, CT helping me in the design studio and custom workroom and helping me get a handle on slang. Boo means boyfriend folks over 25. For a while there, I had a Boo too!  Laura programmed JT into my phone with that name, until he broke up with me. What can I say but BOO-HOO.

So my new Boo. I am talking Bamboo. When I got this table it had layers upon layers of white paint. It actually was hard to distinguish if there was actual wood and grain beneath.

THAT’S MY BOO

I brought the table into http://www.tigerlilysgreenwich.com and hit it with paint thinner and a striping agent. The layers were so thick I needed both chemicals. The trick is to wait it out and let layers peel back. I only wish I could say the same about my relationship. That relationship was only surface.

WAIT AND LET LAYERS PEEL

Once the layers start to peel you can take a blade and scrape the paint away. When you are working with chemicals it is important to use gloves and a face mask. Paint thinner smells fierce and burns your skin at raw touch.

I keep some of the paint for intergreity to show the history of this piece. I like the combination of the paint layers positioned against the natural texture of the revealed bamboo.
