CRUNCHY PEANUT BUTTER & STRAWBERRY JAM ON HOME BAKED CHALLAH

The tradition of breaking bread surrounds a family table. Generally, it is accompanied by a home cooked meal and if you want to take it one step further, the bodies at the table are related in someway genetically or spiritually. Jews break bread on Friday night. It is Shabbat dinner. Shabbat as I understand means tradition anf family values. It is a celebration of our heritage.

BEFORE
A HAND ON THE INGREDIENTS

“In the beginning God created the heavens and the earth.”–Gen 1.1

Challah:

1 tablespoon sugar / 1 3/4 teaspoons active dry yeast /1 cup minus 2 tablespoons water (warm but not boiling) / 2 cups bread flour (scoop and sweep method, un-sifted), plus more for dusting / 2 cups semolina flour (scoop and sweep method, un-sifted) / 1 1/2 teaspoons sea salt / 1/4 cup olive oil, plus more to drizzle / 3 tablespoons honey / 2 large egg yolks / 1 large whole egg

Egg Wash:
1 yolk / 1 tablespoon cream or milk / Sesame seeds, for sprinkling, optional

I not an scholar nor do I want to do enough research to discredit this thought, but as far as I am concerned the first reference to bread was the bible. There is the Jewish fleeing Egypt with the bread unleaven, that would eventually lead to Moses on the Mountain Top with a decree from God of the 10-Commandments of which to live.

YEAST
LEAVEN AGENT
ALSO KNOWN AS FUNGUS

DIRECTIONS:

For the sponge starter: Add the sugar and yeast to the warm water. Mix to dissolve. Add about 1/2 cup of the bread flour and mix vigorously with a wire whisk. Cover with plastic or a plate and leave to ferment in a warm room temperature place for about an hour.

MIX WITH DRYS
FLOUR AND SALT

Add the remaining 1 1/2 cups bread flour, the semolina flour and salt into a mixer bowl. Add the sponge starter, oil, honey, yolks and egg. Hand mix the dough, to develop the gluten.  Shape the dough into a ball and place it back in the bowl. Sprinkle a bit of olive oil. Cover with plastic let rise for  1.5  hours.  It should be relaxed and not pull back to shape immediately.

Turn the dough onto a lightly floured counter and fold it over upon itself few times to redistribute the yeast. This is the point when you get to shape the bread.

The recipe as simply and no-dairy as it is today applied hundreds of thousands of years ago. Before Jesus was born and the world started counting, there was this very bread. The jews of the desert ate it. That is a fact evident in the Bible.

Brush the braided loaf with the egg wash and let rise until doubled in size, about 1 1/2 hours.

The horscope believe it or not was right on so many levels, specifically the “wolf in family man clothing”, line. I am a very private public person, so readers unfortunately you will never know the names and faces behind my personal references.  However, don’t worry the lessons will be ever true and remain the same. Preheat the oven to 450-degrees as the challah rises. The recipe until now has been for one loaf, but traditionally you should always bake two. It is a good luck thing. It is a love thing. It is protection thing.  Also if not mistaken, it is an in the bible thing.

Back to the story of the bread. Americans eat it with labels like Wonder, Panera, Bakery Fresh. To respectfully make it in your own kitchen takes time. We are talking five to six hours. Traditionally shabbath lasts all night into the next. Jews have time to create.  Cooking and baking are afterall very different disciplines. One is instinct, the other is measured and calculated for the perfect outcome.

TIME TO BAKE

I took credit for that one, but I am 100% sure if I had to set out to prove it, I probably could. Lower the oven temperature to 350 degrees F and bake until golden, 30 to 35 minutes. The challah will develop a deep brown and shiny crust, and will sound hollow when tapped on the underside. Cool on a rack.

The before’s are generally vintage. This recipe has 1950s Mad Men advertising world all over it. Sometimes as in this case, that’s not a bad thing.

Here’s what you’ll need: 1. Boxed Corn Muffin Mix 2. Bacon 3. Egg 4. Cranberries 5. Milk 6. Red Onion 7. Sage 8. Crisco 9. Maple Syrup

The snow fed an inpluse to bake. I created this recipe from scratch. It comes from two needs sweet and savory. Start by putting the Corn Mix into the bowl . Everyone starts somewhere, it is the same the first time as the last, only the outcome is different.

Here’s a huge tip, sift the mix. It is archiac, labor intensive and I shutter to think what people who suffer from arthritis in the fingers would do. It is definitely worth it.

EXTRA WORK PAYS OFF

On the stove, heat a fry pan. I threw in cut bacon, onion, garlic, sage and walnuts and let the mixture cook. This is the sweat-out period for these foods. Let the pan get super hot to the point where rendered liquids emulsify.

SWEAT LIKE A PIG

The bacon and walnuts are the heart of the matter. This is the pan where all the flavor is coming together and taking place. This is the part you need to spice and taste. It should taste savory, a little salty and not sweet. The core should be balanced.

FISH FOR SUGAR

Here’s the sweet. Add a one-and-a-half tablespoons of maple syrup to the corn mix. Two eggs and two-thirds a cup of organic whole milk complete the wet mix.

Maple syrup is a natural phenomena.In cold climates, maple trees store starch in their trunks and roots before the winter; the starch is then converted to sugar that rises in the sap in the spring.  It’s nature’s sugar and if well selected doesn’t need to be processed.

For the record,  Aunt Jemima’s is a synethic made from high fructose corn syrup. I said that correctly. It goes with out saying, the more commerical the product, the farther away it is from its roots.  Interior design is the same thing. Back to Aunt Jemina. The majority is corn syrup synethically flavored to taste like maple. The real deal maple taste better, but the kids like the syrup stuff.

Mix all the ingredients together. At this point your oven should be set at 400-degrees and your muffin pan greased.

GREASE THE PAN

Crisco is another 1950s battle and lead advertisement. That’s the fun thing about using iconic old foods, they are loaded with brand names. Organic trends in a new generational thing.

Crisco is an all vegetable shortening. There is I am sure an entire food culture that questions crisco over butter over animal fat.  I tried making them with both the shortening and the bacon fat and they tasted about the same. Crisco is however a bit lighter in density creating a lighter outcome and greater rise from the muffin mix.

If high school chemistry serves me that is all true. What is chemistry but a relationship between two or more elements anyway? Close the door and let the magic take place. Don’t peak or break the temperature for at least 15-minutes.

It was the last time New England and Sunday Football will be paired this season and the first time this year I decided on making this hearty soup.  Yes, the Patriots lost the battle on the gridiron but never was their a more fitting food. LAYER FLAVORS IN A POT & COOK

Start with a base flavor profile. In a deep pot I chopped and added onions, celery and bacon with a little bit of olive oil. The bacon arguably has its own fat, but in cooking in a pot rather than a saute pan, it is essential that nothing burns or sticks. This is the base for soup and any char that develops will stick to the bottom of the pot and surface to the top of your palette.

Wash your potatoes.  It does two things. It reduces the starch and frankly the organisms still potentially living on the skin. Potatoes even bought at Whole Foods are rooted in soil. They are dug up from the earth. Mind you, I like a little grit, but that’s only on the foot ball field.

New England Patriots and the Denver Brancos meet at the center yard line. That’s even playing field. Peyton Manning & Tom Brady were there 14 times before the AFC Championship match-up. It started the last day of September 2001. Tom Brady won the first time. Peyton Manning, the last time. Funny the way it is.

Croutons are a story of old and new. I always use up bread. The same philosophy of reusing, revitalizing and refreshing old furniture in my design life at http://www.tigerlilysgreenwich.com applies to food. I don’t throw food away unless it is rotton.  Eat your leftovers or repurpose them. There are starving people in America who lack access to food.

According to feedarmerica.org, “In 2012, 49.0 million Americans lived in food insecure households, 33.1 million adults and 15.9 million children.”

In layman’s terms, that means two-years ago, 49-million American’s didn’t know where their next meal was coming from, the day before.When you are lucky enough to buy food to feed yourself, use it.bOtherwise it is a waste.

Use old bread for croutons cut into chunks. Mix-in olive oil, shredded cheese and spices until moist. Spread on cookie sheet and bake 350 degrees.

The croutons should crumble and break into different size pieces as you touch. They can last for up to three-weeks in an air-tight seal and perfect added texture to salads. I used it here, unexpectedly, in place of traditional oyster crackers. I stronly believe in presentation and completing a thought in any field. Similiar to design, the thought process in food has no exceptions in balance, texture, color and presentation.

On the subject of full circle comes the completion of the soup. From the initial base, I layered in bay leaves, the potatoes, salt, pepper, the canned little neck clams while slowly adding the liquid components, clam juice, milk and sherry. Let that all cook for at least ten minutes at a boil, then simmer for twenty more.

Serve in a deep bowl with a soup spoon. Garnish with bacon bits and the croutons.

I got board on call waiting and rechecked my instagram. Of the 75-million users daily, I am one. 35% of the users check instagram more then once a day. The term selfie first appeared in the internet urban dictionary June 29, 2009. To paraphrase and update the defined entry, a selfie is a picture taken by yourself that is planned to be uploaded to Facebook,...the obsolete Myspace and now instagram, snapchat, twitter...or any other sort of social networking website.

If you want people to believe in your lifestyle brand, you have to invite them inside your home. Feed them with nuggets of information about you style. I define culture to be what you do and don’t like. That’s the sticking point. I shared my culture with Lonny.com (http://www.lonny.com/magazine/November+2013/PKNA7_-nAsm/1#59). The article detailed my lifestyle, philosophy on love, business and nature. It was called Rural Remix.

Duralee is just one product I endorse. Marketingtechblog.com posted a November 2011 article by Douglas Karr on “Infographic: The Growning Product Placement Industry.”  He concluded that product placement is a 25-billion dollar industry that is potentially influencing story-lines in movies and seriously influencing our buying behaviors. According to Karr, Daniel Craig’s return to James Bond in Skyfall was financed in part by product placement revenue.

I currently don’t get paid by anyone to say what I like. The exception to that rule is when I am trying to sell.

Here’s the penny for my thought. I like L’Oreal’ Sublime Bronze. It comes in a presoaked towelette that is easy to apply. Go to sleep pale, like you haven’t been outside and wake up with a warm tan.

I also like my Huntress Boots. I got them in my television news days at WKMG. Central Florida that season had its share of severe weather and hurricanes. I wore these once reporting on the cresting tide of an flooded lake. Alligators, I later learned the morning were dangerously close. I wear them now when I take my dogs and walk on Babcock Trail. I like to test the products I buy. These boots are still holding up. I am standing in a creek working on a picture of a walking bridge. My feet stayed dry.

TIGER LILY’S TIP #2 Bring Cash

We went on the last day on our September visit with cash. The best reason to have cash is it opens the negotiations. It also sets your budget. Once you are out, your out.  Everyone wants to get the best value when they are at show or buying spec items. The trick is to stay with in a 20% margin. The other point to bargaining in Brimfield is to look for a piece that you think is a bit of challenge. The stuff no-one likes to touch is usually what I gravitate toward. I wanted to keep the look of the barber’s chair consistent with what was existing from its 1930s frame. While the initial frame was cheap, the rebirth was an investment. I think the tip here is that when you buy something at a low price point, you have to love it enough to spend a significant amount more then the purchasing price to get it back to its prime. I think we accomplished that.
