THE ORANGE: ADDING COLOR AND TASTE TO THE CLASSIC FRITTATA
An oranges left in the toe of a Christmas stocking is a traditional homage to St. Nicholas. Shelled nuts are found there too. The story goes that the patron saint took mercy on a struggling father of three young girls who simply had nothing to give for wedding dowries. Those were the times when you had to sell a girl to a man. It has been payback ever since. One quiet winter night, Old Saint Nick climbed to the chimney of the house and dropped golden coins down the chute. They fell into one of the girl’s stockings that was hung to dry. Overtime oranges came to symbolize the golden coins and the european act of gift giving on Christmas was reinforced.

Maple-glazed Turkey Bacon, Eggs, Potatoes, Tomatoes, Onions, Garlic, Heavy Cream, Fig Jam, Walnut Oil, Salt & Pepper, Grated Cheese
Frittata’s come from Italy. It’s an umbrella term for a hearty recipe that combines vegetables, meat and dairy together in an oven to cook. All combinations can work which opens the door for creativity and customization. It’s music to my ears frankly that sounds a little like jingle bell rock. For this recipe I pulled on seasonal inspirations that highlighted oranges and walnuts.
TIP #1 LAYER INGREDIENT IN FRY PAN
Start with the base and build. I start most things I cook with onions and garlic in a fry pan. Your choice here is to fry in animal or plant fat. In the rare occasion you want both, balance is essential. I used lean turkey bacon and walnut oil. A lean protein won’t overpower a counter nut-based protein. Full disclosure, I may not have explained that right.

Once you get the base, you can layer on top. Potatoes and cheese are staple component of traditional frittatas. So is rustic frittatas. I also added tomatoes and squeezed oranges for citrus freshness. Feel free to get creative.
Creative people layer. Josh Hutcherson who stars in the Hunger Games Trilogy said, “I’m all about flannels and layers, sot that’s pretty much what I rock.” I like him.
TIP #2 WHIP EGGS
He’s cute and successful and so is this next technique. Crack the eggs and cream then whip with game strengh. Hopefully, you don’t have to hunt for them. We are a stretch of the timeline from easter in telling this Christmas tale.

TIGER LILY’S TIP #3 COMBINE IN OVEN SAFE DISH
Here’s where the two meet. The perfect human diet is based on one that you cook for yourself. If for only the argument that you have control of how the food is stored, prepared, spiced and cooked. Cooking these proteins together results in a healthy, well balanced meal. In the acclaimed film documentary baring the same name, CJ Hunt argues the perfect human diet should be high in animal fat. Highly refined sugars he says are behind the obesity epedemic.

TIP #5 GRATE CHEESE AND BAKE
Complete, place into the oven and bake for twenty minutes at 350 degrees. If you’re like me and don’t cook by the clock, watch for the top to golden brown. The Frittata for breakfast is better for you then processed grains, like bread. That’s the sell for the recipe. It’s one of dozens I do everyday.

TIP #6 SERVE IN EXCHANGE OF FAST FOOD
Mc Donald’s took the yoke out of the Egg McMuffin. I am not sure what that’s suppose to mean? When you taste the finished Frittata in my recipe it is light with a juicey citrus taste. I am just putting it out there.
In the love story of Katniss and Peta, he smuggles this starving young survivor a loaf of bread. I can’t say for absolute certain my side on the war of grain against meat. In this case, I would go for the grain. It has a 100% love guarantee. In some cultures love is food and then again in the story of St. Nic food is gold. Live your life wisely and in good nature. Think with your head and act with your heart. When the two are in harmony you will always get 100-percent.
